Favorite Pasta Sauce

Here it is my simple past sauce ! Which is a big hit in our family.

There is nothing special about this sauce its just a few ingredients and a bit of time and then you have a great tasting pasta sauce that goes with anything, from pizza sauce, spaghetti and meatballs, chicken parmesan, or even on zucchini noodles !


Ingredients:

  • 3 cloves garlic
  • 1/2 tsp red pepper flakes (or more depending how hot you would like it)
  • 1 tsp fennel seeds
  • 1 tbsp oregano
  • 1-2 tbsp sugar (optional)
  • 1 onion chopped
  • 1/4 cup olive oil
  • 8 cup tomato sauce (make sure to use good quality brand it makes a difference)
  • 4-5 fresh basil leaves
  • salt & pepper
  • 1/2 cup wine (red or white)

Directions:

Don’t worry about chopping everything , I leave the onion chopped into big chunks and leave the garlic whole, because you will blend it at the end!

Began to heat up your oil on medium low heat and add garlic, onion, red pepper and fennel seeds for about 5min. or till onions are translucent. (Be careful not to burn the garlic or it will taste horrible)

Next add your tomato sauce , oregano, fresh basil and a good pinch of salt and pepper and your wine !

Now can also add sugar at this point , I don’t because I like mine to taste a bit tart but if you don’t add 1-2 tbsp of white sugar (or as needed by taste). Now simmer on low heat for 3-4 hours the longer you leave the sauce to cook the better it taste (that’s the big secret) !!!  Make sure to check and stir it occasionally, and I like to keep the lid on half way so I don’t get splatters of sauce everywhere !

When it is done make sure to taste it and check to see if it needs more seasoning, sometimes I like to add some rosemary, or add in some more fennel or salt , once it has cooled down blend it in a blender or use a hand blender and blend the entire sauce and your done !

Tip: I like to make a big batch of this so that I can have some on hand in the freezer !

Chia Breakfast Bowl

My new favorite is Chia seeds ! They are full nutrients, high in protein, full of fibre, they are great source of calcium for people who don’t eat dairy ! The list goes on !

There other morning I made this Chia bowl for breakfast, the amount that I made was quite a bit for me. I was pretty full I only ate about half, but it was great!

This recipe is too easy to share:


Ingredients:

  • 1/2 cup chia seeds
  • 1/2 banana sliced
  • 1/4 cup almonds (chopped)
  • 1/4. cup blueberries
  • 1 cup coconut almond milk (or any kind of milk)

Directions:

I took the chia seeds and almond milk poured it into a bowl and mixed, let it sit in the refrigerator over night, then mixed it again in the morning, it turns it into a thick pudding like jelly. Then I  added in all my toppings too easy! This is perfect for a quick breakfast if your on the go.
